To be honest, deep-frying and pan-frying goodies like fritters and pancakes aren’t something I excel at, I’m better at eating them. But here I am, trying my hand at making veggie pancakes.
Weekends are usually crammed affairs of social, recreation, errands and family. So when Monday hits, I’m usually feeling like a potato, and in usual ‘I’m a potato’ fashion I’ve decided to mash potatoes literally and make a potato and vegetable pancake.
With the incorporation of simple ingredients like corn kernels, peas and spring onion, I think this jolly flat pancake suits fills everyone’s carb intake for the day.
Serves: as many as famished stomachs as possible
400g white potatoes, mashed
2 spring onions chopped
1/2 cup of frozen peas, thawed or soaked in warm water
1/2 cup corn kernels, thawed or soaked in warm water
1 cup of plain flour
2 tsp baking powder
2 eggs, lightly beaten
1/2 cup of milk (I had used 3/4 milk, but I think after making these in real time, I think less milk is better. If 1/2 is too much, feel free to adjust the quantity)

1. Boil potatoes until soft for approx 20 minutes, drain and cool with cold water. Mash potatoes in a large bowl.
2. Add corn, peas, spring onions, milk, flour and eggs together with the mashed potato. Mix well, and hopefully yours doesn’t come off too runny. If it does become runny, sift extra flour bit by bit and try not to stir too much; the mix doesn’t have to be smooth. Thick (thicc) is best.
3. Heat a large pan on high heat with a tbs of olive oil. Place egg rings in the middle of your pan, and dollop two spoonfuls of veggie mix into each of the rings. Fry as many as you like until they’re all golden brown (add extra oil if the pan becomes a little too dry).
4. Once finished, place pancakes onto a plate and serve with Kewpie mayonnaise for that extra oomph and a dash of sweet chilli sauce, just because.
